I'm assuming this would be super expensive, but does anyone have any idea what it would run to replace a Dynon with a G3X Touch in an Astore?

Hi Calmblueskys,
I think your best bet would be to contact any Garmin authorized dealer. If possible after you do your research and find a dealer Your comfortable with take your airplane to them for a solid bid........ I am sure they would be able to provide a firm bid on replacing Your Avionics with the G3X ...... After they see your airplane. Most dealers are still trying to catch up with the 2020 ADSB mandate so it may take Some time to get them to even look at your airplane.......

Sarasota Avionics has a online estimator at: sarasotaavionics.com/g3xwizardObviously ballpark since the labor element is going to be high. Just getting to the autopilot servos is a major job, let alone hardware costs. Might be cheaper to trade in the plane for a new one with the avionics you want.
