I have been told that getting a SLSA insured for flight school, especially if new, is down to one underwriter and that one has suspended any new policies. Any advice?

Have you worked with Falcon Insurance? They're the official insurance agency for the EAA. They are very aggressive and probably have the deepest and broadest reach for more unique situations such as aerobatic airplanes, antiques, and SLSA's. You might have already spoken with them, but if not, hope this helps.
